Ingredients
1–2 cups cooked chicken (shredded or grilled)
2–4 tbsp halal BBQ sauce (alcohol-free)
1 cup cottage cheese (low-fat or full-fat)
½–1 cup corn (fresh, canned, or frozen)
½ cup cherry tomatoes (halved)
½ avocado (diced or sliced)
¼–½ cup red onion or green onions (chopped)
Optional: black beans or quinoa
1 tbsp olive oil (optional drizzle)
Salt & pepper (to taste)
Optional: smoked paprika or garlic powder
Instructions
Cook and shred chicken if needed
Toss chicken with BBQ sauce until fully coated
In a mixing bowl, combine cottage cheese with salt, pepper, and optional spices like garlic powder or smoked paprika
Add seasoned cottage cheese to the bottom of a serving bowl as the base
Layer BBQ-coated chicken on top of the cottage cheese
Add corn, halved cherry tomatoes, diced avocado, and chopped onions as toppings
If using, sprinkle black beans or quinoa for additional protein
Optionally drizzle with olive oil before serving
