Ingredients
2–3 cups cooked chicken (shredded or chopped)
¾–1 cup BBQ sauce (vegetarian-friendly)
1 small onion (diced)
1 bell pepper (diced)
1 cup corn (fresh, canned, or frozen)
1 can diced tomatoes (optional)
1–2 cups shredded cheddar cheese
1 cup cornmeal (or boxed cornbread mix)
½–1 cup flour (if making from scratch)
1 egg
½–1 cup milk
¼ cup butter or oil
1–2 tbsp sugar
1 tsp baking powder
Instructions
Preheat oven to 375–400°F (190–200°C). Grease a 9×13-inch baking dish
Sauté onion and bell pepper in a skillet until translucent
Add cooked chicken, BBQ sauce, corn, and tomatoes. Cook until heated through
Stir in half the cheddar cheese and transfer mixture to the baking dish
In a separate bowl, mix cornmeal, flour, sugar, baking powder, egg, milk, and oil until smooth
Pour cornbread batter evenly over the chicken mixture
Top with remaining cheddar cheese
Notes
Use a low-sugar BBQ sauce for better nutrition control
Substitute cornbread mix for easier preparation
Vegetarian option: skip chicken and BBQ sauce
Cheddar cheese can be replaced with mozzarella or vegan alternative
