Description

These Apricot Shortbread Bars combine a buttery, crumbly shortbread crust with a tangy-sweet apricot filling, making them a decadent yet simple dessert perfect for any occasion.


Ingredients

1 cup unsalted butter (softened)
2/3 cup granulated sugar
1/2 teaspoon vanilla extract
2 1/3 cups all-purpose flour
1/4 teaspoon salt
1 cup apricot preserves or jam
1/2 cup finely chopped dried apricots (optional)


Instructions

Preheat your oven to 325°F (165°C) and line a 9×13 inch baking pan with parchment paper.
In a mixing bowl, cream together the butter, sugar, vanilla extract, and salt until well blended.
Gradually add the flour and mix until a crumbly dough forms.
Press about two-thirds of the shortbread mixture into the bottom of the baking pan to form the crust.
Spread the apricot preserves evenly over the crust. If the preserves are too thick, warm them slightly in the microwave.
Sprinkle the remaining shortbread mixture over the apricot layer, creating a streusel-style topping.
Bake for 30-35 minutes or until the topping is golden and the edges are lightly browned.
Let the bars cool completely before cutting into squares and serving.
