Ingredients
8 chicken thighs
Coarse salt and freshly ground black pepper
1 jar (12 oz) apricot jam
2 tablespoons honey
2 tablespoons Dijon mustard
Instructions
Preheat oven to 425°F (220°C)
Place chicken thighs in a baking dish and season generously with salt and pepper
In a saucepan, combine apricot jam, honey, and Dijon mustard. Boil gently, stirring frequently, then reduce heat and simmer for 10-15 minutes until thickened
Spoon glaze evenly over chicken thighs
