Description

Ingredients

1 1/3 cups all-purpose flour
10 tbsp unsalted butter (chilled, diced)
5 tbsp sugar
1/2 tsp salt
1/4 cup toasted almonds (finely ground)
1 large egg
1/8 tsp salt
1/2 tsp lemon zest
2 tbsp brown sugar
1 tsp vanilla extract
1 tbsp flour
1/2 cup heavy cream
2 lbs fresh apricots (halved, pitted)
1 tbsp almond flour
1/4 cup apricot preserves
3 tbsp water


Instructions

Preheat oven to 350°F (175°C)
Toast almonds for 5–7 minutes until golden, then cool and grind finely
Combine flour, sugar, 1/2 tsp salt, and ground almonds in a bowl
Cut in chilled butter until dough forms
Press dough into a tart pan, bake for 20–25 minutes until golden
In a bowl, whisk egg, brown sugar, lemon zest, 1 tbsp flour, almond flour, vanilla, and heavy cream; spread over cooled crust
Bake for 15–20 minutes until filling is set
In a saucepan, heat apricot preserves and water until glossy; brush over tart
Cool completely before serving

Notes

Use fresh apricots for best flavor
Tart can be stored in an airtight container in the fridge for 2–3 days
For a gluten-free option, substitute all-purpose flour with gluten-free flour blend
