Ingredients
2 crisp apples (like Gala or Pink Lady)
1 pear (Anjou or Bartlett)
1 cucumber (seedless or regular, seeds removed if needed)
1 small sweet onion
2 tablespoons whole grain mustard
2 tablespoons fresh dill (or 2 tsp dried)
2 tablespoons apple cider vinegar
1/2 teaspoon brown sugar
4 tablespoons olive oil
Instructions
Whisk together whole grain mustard, fresh dill, apple cider vinegar, brown sugar, and olive oil in a small bowl to create the dressing.
Core and thinly slice apples and pear, leaving skins on for texture and color.
Slice cucumber into rounds or half-moons, removing seeds if using regular cucumbers. Thinly slice the sweet onion.
In a large bowl, combine sliced apples, pear, cucumber, and onion.
Toss the salad with the prepared dressing until evenly coated.
Notes
For optimal crispness, store apples and cucumbers separately until ready to toss.
Using pre-chopped dill and sweet onions can save prep time.
