Ingredients
4 large flour tortillas
8 oz cream cheese softened
1 cup shredded carrots
1 cup bell peppers sliced
1 cup cucumber sliced
1 cup spinach or mixed greens
Salt and pepper to taste
Optional: olives, diced tomatoes, fresh herbs
Instructions
1. Mix softened cream cheese with salt and pepper in a bowl
2. Spread cream cheese evenly over each tortilla
3. Add vegetables in an even layer leaving space at edges
4. Roll tortillas tightly from one side to the other
5. Slice into 1-inch pieces using a sharp knife
6. Serve immediately or chill before serving
