Ingredients
2 cups all-purpose flour
2 tsp baking powder
¼ tsp salt
½ cup sugar
1 egg
¾ cup milk
2 tbsp melted butter
1 tsp vanilla extract
Instructions
In a large bowl, whisk together flour, baking powder, salt, and sugar until smooth
Add egg, milk, melted butter, and vanilla extract to the dry ingredients. Stir gently until a silky batter forms
Knead the dough lightly on a floured work surface for 10 seconds
Roll dough to ½-inch thickness and cut into rounds using a cookie cutter or glass
Heat a skillet over medium heat and add butter or oil. Place cut dough into the skillet and cook for 2–3 minutes per side until golden brown
Transfer pancakes to a serving plate. Optional: dust with powdered sugar or drizzle with honey
Notes
For extra richness, experiment with adding a pinch of cinnamon or a splash of orange zest to the batter
Store leftovers in an airtight container for up to 2 days
Freeze cooked pancakes on a baking sheet before transferring to a ziplock bag for longer storage
