Creamy overnight oats with fresh strawberries, Greek yogurt, and chia seeds. Make ahead for a quick, healthy breakfast that tastes like dessert!
Ingredients
½ cup old-fashioned rolled oats
½ cup milk (any kind)
½ cup Greek yogurt (plain or vanilla)
1 tablespoon chia seeds
1 tablespoon maple syrup or honey
½ teaspoon vanilla extract
Pinch of salt
½ cup fresh strawberries, diced (plus more for topping)
Optional: 1-2 teaspoons additional sweetener if berries are tart
Instructions
1. In your jar or container, combine the oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla, and pinch of salt. Give it a really good stir – you want everything well combined so the oats soak evenly.
2. Fold in the diced strawberries. Save a few pretty slices for the top if you like. The strawberries will release their juices overnight and create a beautiful pink-swirled pattern.
3. Seal your jar tightly and pop it in the refrigerator. Let it work its magic for at least 4 hours, but overnight is perfect. The oats will soften and absorb all those delicious flavors while you sleep!
4. In the morning, give everything a quick stir. The oats will be thick and creamy. If you like them thinner, add a splash of milk. Top with fresh strawberry slices, a drizzle of honey, or even some granola for crunch.
Notes
Use old-fashioned rolled oats, NOT quick oats or steel-cut. Quick oats turn mushy, steel-cut stay too chewy.
Don’t skip the chia seeds – they make the oats extra thick and satisfying.
If strawberries are tart, taste before refrigerating and add more sweetener if needed.
Make 3-5 jars at once on Sunday for easy weekday breakfasts!
Add a tablespoon of cream cheese for extra richness.
Use a potato masher to lightly crush some strawberries for extra berry flavor.
