Description

Rotel Pasta Fiesta delivers a creamy, savory pasta dish with a zesty kick from tomatoes and green chilies. This quick one-pan meal uses simple ingredients and brings bold flavor to your dinner table in under 30 minutes.


Ingredients

8 oz pasta (rotini or penne)

1 can Rotel diced tomatoes with green chilies (10 oz)

1 can black beans drained and rinsed (15 oz)

1 cup corn (frozen or canned)

1 cup shredded cheese (cheddar or pepper jack)

1/2 cup sour cream or Greek yogurt

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste


Instructions

1. Bring a large pot of salted water to a boil and cook pasta until al dente then drain and set aside

2. Heat olive oil in a large skillet over medium heat

3. Add black beans corn and Rotel tomatoes with juice then stir

4. Add garlic powder onion powder salt and pepper then simmer for 5 minutes

5. Add cooked pasta to the skillet and mix well

6. Remove from heat and stir in sour cream and shredded cheese until creamy

7. Serve warm and garnish with extra cheese if desired

Notes

Do not overcook pasta to keep the texture firm

Add hot sauce or cayenne pepper for extra heat

Use Greek yogurt for a lighter option

Add cooked chicken or ground beef for more protein

Store leftovers in an airtight container for up to 4 days
