Description
Easy no-bake Ritz peanut butter cookies made with buttery crackers, creamy peanut butter, and smooth chocolate coating. Perfect for holidays and gifting.
Ingredients
- 48 Ritz crackers
- 3/4 cup creamy peanut butter
- 8 oz milk chocolate melting wafers
- 8 oz white chocolate melting wafers (optional)
- 2 tsp coconut oil, divided
Instructions
1. Spread about 1 tablespoon of peanut butter onto half of the Ritz crackers.
2. Top each with another cracker to create sandwiches, pressing gently.
3. Place sandwiches in the freezer for 10-15 minutes to firm up.
4. Melt chocolate wafers with coconut oil in microwave-safe bowls, stirring every 30 seconds until smooth.
5. Dip each chilled sandwich into melted chocolate using a fork, tapping off excess.
6. Place on parchment-lined baking sheet and add sprinkles if desired.
7. Refrigerate for 15-20 minutes until chocolate sets completely.
Notes
Use regular creamy peanut butter, not natural, for best results.
Freezing the sandwiches before dipping prevents crumbs in your chocolate.
Store in airtight container in refrigerator for up to one week.
