Ingredients
1 large 10-inch tortilla
1/4 cup shredded cheddar cheese
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded cooked chicken
2 tablespoons BBQ sauce
1/4 cup fresh sliced peaches
1 jalapeño, sliced (optional)
Fresh cilantro to taste
Instructions
Heat a skillet over medium heat
Place tortilla in the pan
Sprinkle half the cheese on one side
Layer chicken, BBQ sauce, peaches, jalapeño (if using), and cilantro on top
Add remaining cheese
Fold tortilla over filling and cook for 2–4 minutes per side until golden and crispy
Slice and serve warm
Notes
Use leftover rotisserie chicken to save time
Experiment with pepper jack cheese for added heat
