Fresh mint, zesty lime juice, and a simple syrup come together to create something that tastes fancy but requires zero fuss.
Ingredients
For the Mint-Lime Simple Syrup:

For the Limeade Base:

- 1¼ cups freshly squeezed lime juice (about 10-12 limes)

- Chilled sparkling lime water (any brand you like)

Instructions
Grab a small saucepan and combine the water, sugar, mint leaves, and lime zest. Set it over medium heat and stir until the sugar dissolves completely.
Once it starts to simmer, take it off the heat and let it steep for about 10 to 15 minutes. The longer it sits, the more minty flavor you’ll get, so don’t rush this step.
Pour the syrup through a fine mesh strainer into a clean jar or bowl. Use the back of a spoon to really press down on those mint leaves and squeeze out every drop of flavor.
This step is important because that’s where all the good minty oils are hiding. Don’t be shy about pressing hard to get the most out of your herbs.
In your pitcher or bottle, pour in the fresh lime juice and all of that gorgeous mint-lime syrup you just made. Give it a good stir to combine everything.
Add cold water to fill the container, but remember you want this base to be strong and concentrated. You’ll be diluting it with sparkling water later, so keep that in mind.
Pop that limeade base into the fridge and let it chill for at least an hour. The flavors will meld together beautifully as it sits.
If you’re in a hurry, you can serve it right away, but trust me when I say the wait is worth it. Cold limeade on a hot day just hits different.
When you’re ready to serve, drop a few fresh mint leaves into the bottom of each glass. This is where the magic happens.
Take your muddler or the back of a spoon and gently press the mint to release those essential oils. You’ll smell the difference immediately, and it makes every sip more refreshing.
Fill your glasses with ice, then pour in the limeade base until the glass is about halfway to two-thirds full. The exact amount depends on how strong you like your drinks.
Top it off with chilled sparkling lime water and watch it fizz up beautifully. Give it a gentle stir and add a sprig of mint or lime slice if you’re feeling fancy.
Notes
Storage: Store the limeade base in a sealed container in the fridge for up to 5 days. Keep the simple syrup separate from the lime juice if you want it to last longer (up to a week). Store sparkling water separately until you’re ready to serve to maintain the fizz.
Make-Ahead: The mint-lime simple syrup can be made up to three days ahead and stored in the fridge. Mix the limeade base without the sparkling water and keep it in the fridge for up to five days.
Variations: For a tropical twist, muddle some fresh strawberries or raspberries into the bottom of your glass along with the mint. Add a few slices of fresh jalapeño to the simple syrup while it steeps for a subtle heat. Try swapping half the mint for fresh basil for a more herbal, sophisticated flavor.
