Description

A vibrant and tangy Mexican coleslaw with creamy dressing, bold taco seasoning, and colorful vegetables. Perfect for barbecues, tacos, or side dishes.


Ingredients

1 cup mayonnaise
2/3 cup sour cream
3 tablespoons lime juice
2 tablespoons taco seasoning
1 (16 oz) bag tri-color coleslaw mix
1 red bell pepper, diced
1 1/2 cups grape tomatoes, halved
1 (15 oz) can black beans, drained and rinsed
1 1/2 cups grilled or blackened corn
1 jalapeño, seeded and minced
1/2 cup fresh cilantro, chopped
Salt & black pepper to taste


Instructions

In a small bowl, mix together mayonnaise, sour cream, lime juice, and taco seasoning until smooth. Set aside.
In a large bowl, combine coleslaw mix, diced red bell pepper, halved grape tomatoes, drained black beans, grilled corn, minced jalapeño, and chopped cilantro.
Pour the dressing over the salad mixture and gently toss until evenly coated.
Season with salt and black pepper to taste.

Notes

Tastes best when chilled for at least 30 minutes before serving.
Adjust jalapeño quantity for heat level.
Store in an airtight container in the refrigerator for up to 2 days.
Optional: Add avocado slices or avocado oil to enhance creaminess.
