Description

Crispy golden potatoes replace the bun in this genius Big Mac twist. All the iconic flavors you love with hearty, satisfying potatoes!


Ingredients

For the Potatoes:

700g (1 lb 9 oz) potatoes, diced into ¾-inch cubes

2 tablespoons olive oil

1 teaspoon sweet paprika

1 teaspoon onion powder

½ teaspoon sea salt

¼ teaspoon black pepper

For the Beef:

1 tablespoon olive oil

1 onion, finely diced

500g (1 lb 2 oz) lean ground beef

1 teaspoon sea salt

1 teaspoon sweet paprika

½ teaspoon onion powder

½ teaspoon garlic powder

¼ teaspoon black pepper

For the Burger Sauce:

1 cup (250g) mayonnaise

2 tablespoons finely chopped pickles

1 teaspoon Dijon mustard

1 tablespoon ketchup

1 teaspoon sweet paprika

1 teaspoon onion powder

1 teaspoon garlic powder

1-2 tablespoons water

For Serving:

2 cups shredded cheese blend

1 head romaine lettuce, shredded

½ cup sliced pickles

Diced white onion for garnish


Instructions

1. Preheat oven to 425°F for at least 20 minutes. Line a large baking sheet with parchment paper.

2. Toss diced potatoes with olive oil, paprika, onion powder, salt, and pepper on the baking sheet. Spread in single layer without overlapping.

3. Bake for 40-45 minutes, flipping halfway through, until golden brown and crispy. For air fryer: cook at 400°F for 20-25 minutes, shaking basket halfway.

4. While potatoes cook, whisk together mayonnaise, chopped pickles, mustard, ketchup, paprika, onion powder, and garlic powder. Add water 1 tablespoon at a time until desired consistency. Set aside.

5. Heat olive oil in large skillet over medium-high heat. Add diced onion and cook for 1-2 minutes until softened.

6. Add ground beef and break up with wooden spoon. Add salt, paprika, onion powder, garlic powder, and pepper. Cook 6-8 minutes until completely browned.

7. Divide crispy potatoes among four bowls. Top each with seasoned ground beef and generous sprinkle of shredded cheese.

8. Layer on shredded lettuce, sliced pickles, and diced onion. Drizzle generously with burger sauce.

9. Mix everything together before eating and enjoy immediately.

Notes

Don’t overcrowd the baking sheet – use two pans if needed for crispy potatoes.

Cut potatoes to uniform size for even cooking.

Soak diced potatoes in cold water for 30 minutes before roasting for extra crispiness. Pat completely dry first.

Make burger sauce up to 5 days ahead.

For extra melty cheese, pop bowls under broiler for 2 minutes.
