Ingredients
1 lb cooked shrimp, peeled and deveined
2 avocados, peeled, pitted, and diced
2 tomatoes, diced
1 small sweet onion, finely chopped
2 tablespoons fresh lime juice
Salt and pepper, to taste
Instructions
Chop cooked shrimp into bite-sized pieces. Dice avocados, tomatoes, and onion into uniform pieces.
In a large bowl, combine shrimp, diced avocado, tomatoes, and onion.
Add lime juice, then season with salt and pepper.
Gently toss with a spatula to avoid mashing the avocado.
Serve immediately or chill slightly before serving.
Notes
