Leprechaun Bait is an easy no-bake snack mix featuring Chex cereal, pretzels, Lucky Charms, and green candies coated in smooth white chocolate and topped with green sanding sugar. Ingredients
For the Snack Mix:
- 2 cups corn Chex cereal
- 1 cup pretzel twists
- 1 cup Lucky Charms cereal
- ½ cup green-colored candy pieces (such as green M&M’s)
- 12 ounces white chocolate chips
- 1 teaspoon green sanding sugar
Optional Add-Ins:
- Extra Lucky Charms marshmallows (because who doesn’t want more?)
- Additional green sprinkles
- Tiny gold or shamrock-shaped sprinkles
- Other candies in green or gold colors
Instructions
Place the corn Chex cereal, pretzel twists, Lucky Charms, and green candy pieces into a large mixing bowl. Give it a gentle toss to mix everything together. This is where you can pick out extra marshmallows from the Lucky Charms if you want more in the final mix—I always do!
Pour your white chocolate chips into a microwave-safe bowl. Heat in 30-second bursts, stirring thoroughly between each interval. Usually takes 2-3 bursts total. Keep a close eye on it—white chocolate can go from perfectly melted to scorched in seconds! It should be smooth, creamy, and completely lump-free.
Pour that gorgeous melted white chocolate right over your cereal mixture. Working quickly but gently, use your spatula to fold and stir until every piece is coated. Don’t be too aggressive or you’ll break up the cereal—just keep folding until everything looks glossy and white.
Immediately sprinkle the green sanding sugar over the chocolate-coated mixture while it’s still wet. Give it a few gentle stirs to distribute that sparkle throughout. This is where the magic happens—literally!
Spread your Leprechaun Bait in a single layer on a baking sheet. I like to line mine with parchment paper first for easy cleanup. Let it sit at room temperature for 20-30 minutes until the chocolate is completely firm. If you’re impatient (guilty!), pop it in the fridge for about 10-15 minutes to speed things up.
Once the chocolate is hard, break the mixture into bite-sized clusters. Some pieces will be big, some small—that’s perfect! Store in an airtight container or portion into treat bags.
Notes
- Don’t overheat the chocolate. White chocolate has a lower melting point than regular chocolate and can seize up or burn easily. Low and slow is the way to go—30 seconds at a time, stirring between each burst.
- Use a LARGE bowl. You need room to stir without flinging chocolate-covered cereal all over your counter. Ask me how I know.
- Line your pan. Parchment or wax paper makes this SO much easier to handle once it’s set. You can just lift the whole sheet off and break it apart.
- Save some marshmallows. Pick out extra Lucky Charms marshmallows and toss them on top RIGHT before the chocolate sets completely. They’ll stick and look adorable.
