Description
Refreshing carbonated lemon soda with perfect sweet-salty-tart balance. Fresh lemon juice, sugar, salt, and club soda create fizzy drink ready in just 5 minutes.
Ingredients
4 fresh lemons for juicing
2 teaspoons sugar per serving
Quarter teaspoon salt per serving
2 tablespoons chilled water per serving
1 cup club soda per serving (well chilled)
Ice cubes as desired
Thin lemon slices for garnish
Instructions
1. Cut lemons in half. Roll lemons on counter with palm first, pressing down firmly to break down membranes inside and release more juice. Use citrus juicer to extract fresh juice. Collect juice in small bowl, catching any seeds with strainer or fingers. You need about 1-2 tablespoons fresh lemon juice per serving.
2. To tall serving glass, add about 1 tablespoon fresh lemon juice first. Add salt and sugar. Pour in chilled water and stir everything together really well with long spoon until sugar completely dissolves. Take your time with this step. Sugar must fully dissolve or it sinks to bottom.
3. Fill glass about three-quarters full with ice cubes. You want enough ice to keep drink really cold, but still leave room for soda. Drop in thin slice of lemon for garnish. Lemon slice adds little bursts of extra flavor as you sip.
4. Shake bottle of club soda to make sure it is nice and bubbly. Slowly pour club soda into glass, filling to top. Watch it fizz and bubble up. Pour gently so it does not overflow from bubbles. Pause if it gets too foamy and let it settle before continuing.
5. Give whole drink one quick, gentle stir to mix everything together. Stir gently to avoid losing lovely bubbles you just added. Serve immediately while still fizzy and ice cold. Lemon soda is best enjoyed right away before bubbles fade.
Notes
Always use fresh lemon juice, never bottled. Flavor difference is significant.
Make sure club soda is really cold and has not been sitting open in fridge. Flat soda makes sad lemon soda.
Make lemon juice ice cubes and use those instead of regular ice so drink does not get watered down.
Prep lemon juice ahead and keep in fridge for up to 2 days for quick assembly.
Use simple syrup instead of sugar if you want it to dissolve instantly without stirring.
Add pinch of chat masala and roasted cumin powder for masala lemon soda variation.
Muddle fresh mint leaves in bottom of glass before adding lemon juice for mint lemon soda.
Add bit of grated fresh ginger for spicy kick that aids digestion.
