Ingredients

1 cup unsalted butter, softened

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup powdered sugar

2 tablespoons fresh lemon juice

Instructions

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Beat butter and sugar until light and fluffy.

3. Add eggs, lemon zest, and lemon juice and mix well.

4. Whisk flour, baking powder, baking soda, and salt in a separate bowl.

5. Add dry ingredients to wet ingredients and mix just until combined.

6. Drop tablespoon-sized dough balls onto the baking sheet spaced apart.

7. Bake for 10 to 12 minutes until edges turn lightly golden.

8. Cool cookies on a rack.
