Description

A quick and vibrant dish combining honey-lime marinated chicken with fluffy rice, fresh vegetables, and zesty toppings. Perfect for a family-friendly, customizable meal that’s flavorful yet easy to prepare.


Ingredients

lbs chicken breast or thighs
3 tbsp olive oil
2 tbsp honey
Juice of 2 limes
3 cloves garlic (minced)
1 tsp chili powder
1 tsp cumin
Salt & black pepper (to taste)
2 cups cooked rice (white or brown)
1 cup corn (fresh, canned, or frozen)
1 cup black beans (rinsed & drained)
1 avocado (sliced)
½ cup cherry tomatoes (halved)
¼ cup red onion (diced)
Fresh cilantro (chopped)
½ cup Greek yogurt or sour cream (optional)
1 tbsp lime juice (optional)
1 tbsp honey (optional)
1 tbsp chopped cilantro (optional)
Salt & pepper (to taste, optional)


Instructions

In a bowl, whisk together olive oil, honey, lime juice, garlic, chili powder, cumin, salt, and black pepper for the marinade
Marinate chicken for 15–30 minutes
Cook rice according to package instructions; set aside
Heat a skillet over medium-high heat and cook chicken until golden and fully cooked, 5–6 minutes per side
In another pan or bowl, combine corn, black beans, cherry tomatoes, red onion, and fresh cilantro
Warm cooked rice in a bowl, top with honey-lime chicken and vegetable mixture. Add avocado slices and optional Greek yogurt/sour cream with lime juice, honey, or cilantro

Notes

Customize with additional toppings like bell peppers, lettuce, or sliced jalapeños. Use fresh lime juice over bottled for brighter flavor. Adjust meat options to chicken breasts or thighs based on personal preference.
