Ingredients

  • 1 pound ground lamb
  • 1/2 red onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • Slider buns
  • Thinly sliced cucumber (2-3 slices per slider)
  • 4 ounces block feta cheese
  • 1/4 cup plain yogurt
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill
  • 1/2 lemon, juiced


Instructions

1. Add feta, yogurt, olive oil, black pepper, dill, and lemon juice to food processor. Blend for 1-2 minutes until completely smooth and creamy with no lumps. Set aside.

2. In a large bowl, combine ground lamb, diced red onion, fresh parsley, fresh dill, salt, and lemon juice. Use hands to mix everything together gently but thoroughly.

3. Divide lamb mixture into 8 equal portions and shape into slider-sized patties. Make them slightly larger than your buns since they’ll shrink while cooking. Make a small indentation in the center of each patty.

4. Heat 1 tablespoon oil in large skillet over medium-high heat. Let it get nice and hot before adding patties.

5. Add patties to hot skillet and cook for 3-4 minutes per side until nicely browned outside and cooked through completely. Don’t press down on patties – it squeezes out juices.

6. Place cucumber slices on bottom bun, top with lamb patty, add 1-2 tablespoons of feta sauce, and cap with top bun. Serve immediately while warm.

Notes

Don’t overmix lamb mixture or sliders will be tough – mix just until combined.

Make a small indentation in each patty center to prevent puffing up.

Toast slider buns in the pan after cooking patties for extra flavor.

Use block feta, not pre-crumbled – it blends much smoother.

Fresh herbs are essential for best flavor.
