Ingredients
8 ounces rotini or penne pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced
1/2 red onion, finely chopped
1 cup feta cheese, crumbled
1/4 cup Kalamata olives, sliced
1/4 cup fresh parsley, chopped
1/3 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
1. Cook pasta in salted boiling water until al dente
2. Drain and rinse pasta under cold water
3. Chop tomatoes, cucumber, bell pepper, and onion
4. Whisk olive oil, vinegar, lemon juice, oregano, salt, and pepper
5. Combine pasta, vegetables, feta, olives, and parsley in a bowl
6. Pour dressing over salad and toss gently
7. Chill in refrigerator for 30 minutes before serving
