Garlic Parmesan Grilled Chicken

Description

Skewered grilled chicken with butter, garlic, and Parmesan creates a crispy golden crust with a hint of lemon. Ready in just 20 minutes.


Ingredients

4 tablespoons butter

3 tablespoons Parmesan cheese, grated

4 cloves garlic, chopped

1 pinch red pepper flakes (optional)

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped

1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces

1 teaspoon Cajun seasoning

Wooden or metal skewers


Instructions

1. Melt the butter with Parmesan cheese, chopped garlic, and red pepper flakes over medium-low heat. Stir gently and let it bubble for about 1 minute. Turn off heat and mix in lemon juice and parsley.

2. Cut chicken into 1 to 1.5 inch pieces. Sprinkle Cajun seasoning evenly over all pieces and toss to coat.

3. Thread chicken onto skewers, leaving space between each piece. Don’t pack them too tightly.

4. Preheat grill to medium-high heat (400-450°F). Oil the grates lightly to prevent sticking.

5. Place skewers on hot grill and cook for 2 to 4 minutes on first side. Brush tops generously with garlic Parmesan butter.

6. Flip skewers and cook another 2 to 4 minutes. Baste again with more butter.

7. Check that chicken reaches 165°F internal temperature and has nice char marks. Let rest 1-2 minutes before serving.

Notes

Soak wooden skewers for 30 minutes before using to prevent burning.

Save a little garlic Parmesan butter to drizzle over finished chicken.

Use chicken thighs instead of breasts for extra juiciness.

Can be made in oven at 425°F for 15-20 minutes, basting halfway through.

Store leftovers in airtight container for up to 3 days.
