Easy frozen Greek yogurt bites with peanut butter, honey, and chocolate coating. Perfect healthy snack that tastes like dessert!
Ingredients

- 2 cups plain Greek yogurt (whole milk or nonfat both work)

- ¼ cup natural peanut butter (or almond butter, sunflower butter)

- 3 tbsp honey or maple syrup

- 1 tsp vanilla extract

- 1 cup chocolate chips (semi-sweet, dark, or milk chocolate)

- 1 tbsp coconut oil
Instructions
In a large bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Stir vigorously until completely smooth and creamy. The peanut butter may resist at first, but keep stirring—it’ll come together into a uniform mixture.
Line a baking sheet with parchment paper. Using a tablespoon or small cookie scoop, drop spoonfuls of the yogurt mixture onto the prepared sheet. Aim for uniform sizes so they freeze at the same rate. You should get about 24 bites.
Transfer the baking sheet to the freezer and freeze for 3-4 hours, or until the bites are completely solid. Don’t skip this step—they need to be frozen hard before chocolate coating or they’ll fall apart!
When the bites are frozen solid, melt the chocolate chips with coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until completely smooth. The coconut oil helps the chocolate stay thin for easy dipping.
Working quickly (the yogurt bites will start to soften!), dip each frozen bite into the melted chocolate. Use a fork to turn it and coat completely, then tap off excess chocolate. Place back on the parchment-lined sheet.
Once all bites are coated, return the sheet to the freezer for 10-15 minutes until the chocolate hardens completely. Then transfer to an airtight container for storage.
Notes
Use tablespoon cookie scoop for uniform sizes. Warm peanut butter slightly in microwave for easier mixing.
Add mini chocolate chips to yogurt mixture for extra chocolate flavor.
