Description
A light, high-protein, crustless quiche made with fresh spinach, creamy cottage cheese, and eggs. Perfect for breakfast, brunch, or dinner. Low in carbs and packed with flavor.
Ingredients
1 tbsp oil
1 small onion (diced)
½ bell pepper (diced)
2 cups fresh baby spinach (chopped)
1½ cups cottage cheese
4 large eggs
1 cup shredded cheddar cheese (or cheddar + mozzarella mix)
½ cup milk
½ tsp garlic powder
1 tsp Italian seasoning
Salt & black pepper (to taste)
Instructions
Preheat oven to 350°F (175°C)
Heat oil in a skillet over medium heat
Sauté diced onion and bell pepper for 3–4 minutes until softened
Add spinach and cook until wilted (2–3 minutes)
Season cooked vegetables with salt, pepper, and garlic powder; let cool
Whisk eggs, milk, cottage cheese, Italian seasoning, salt, and pepper in a bowl
Add shredded cheese to the egg mixture and mix well
Fold cooled vegetables into the egg-cheese mixture
Grease a 9-inch baking dish and pour in the quiche mixture
Bake for 40–45 minutes until center is set and top is lightly golden
Let cool before slicing and serving
Notes
Use fresh spinach for optimal flavor and texture.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Serve slightly warmed or at room temperature.
Optional add-ins: cherry tomatoes (halved) or sautéed mushrooms.
