Description
A healthy, protein-rich dessert made with cottage cheese, peanut butter, and honey blended into a creamy, mousse-like texture. Perfect for breakfast, snacks, or dessert with endless topping options
Ingredients
For the Mousse:
- 1½ cups cottage cheese (full fat or low fat)
- ½ cup creamy peanut butter
- 3–4 tablespoons honey or maple syrup (adjust sweetness to taste)
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: 1–2 tablespoons milk (dairy or dairy-free) for creamier texture
Optional Toppings:
- Fresh banana slices
- Dark chocolate shavings or cocoa nibs
- Chopped peanuts
- Drizzle of honey or peanut butter
- Berries (strawberries, blueberries, raspberries)
Instructions
Add the cottage cheese, peanut butter, honey (or maple syrup), vanilla extract, and pinch of salt to your blender or food processor. Make sure your cottage cheese is cold for the best texture!
Blend on high speed until the mixture is completely smooth and creamy – this usually takes 1-2 minutes. You want ZERO lumps or graininess. Stop halfway to scrape down the sides with a spatula to make sure everything gets incorporated.
If your mousse is too thick (it should be spoonable but creamy), add 1–2 tablespoons of milk and blend again for 30 seconds until you reach your desired consistency. It should look like soft-serve ice cream!
This is the fun part! Taste your mousse and adjust the sweetness or peanut butter level as needed. Want it sweeter? Add another tablespoon of honey. More peanut buttery? Stir in an extra spoonful of PB.
Spoon the mousse into serving bowls or small glasses. I love using clear parfait glasses so you can see those gorgeous layers when you add toppings!
Get creative here! Top with fresh banana slices, chopped peanuts, berries, or dark chocolate shavings. A little drizzle of honey or extra peanut butter on top makes it look bakery-worthy.
Refrigerate for at least 30 minutes before serving. This allows the flavors to meld and the texture to firm up into that perfect mousse consistency.
Notes
- Use Cold Cottage Cheese: Straight from the fridge works best for that thick, creamy texture.
- Natural Peanut Butter Warning: If using natural peanut butter, make sure it’s well-stirred and not separated. The oils can make the mousse too runny.
- Avoid Over-Thinning: Add milk one tablespoon at a time. It’s easier to thin than to thicken!
- Make It Chocolate PB: Add 2 tablespoons of cocoa powder for a chocolate peanut butter version!
- Common Mistake: Don’t skip the chilling time. Room temperature mousse is good, but chilled mousse is INCREDIBLE.
