Ingredients

For the Toast:

  • 1 egg
  • 2 slices bread (sourdough, whole wheat, or your favorite)
  • ½ ripe avocado (the kind that gives just a little when you squeeze it)
  • ½ cup cottage cheese (full-fat tastes the creamiest, but any works!)

Optional Seasonings & Toppings:

  • ⅛ teaspoon paprika (adds a hint of warmth)
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 teaspoon Dijon mustard (my secret weapon for depth!)
  • 1 tablespoon sliced green onion

Instructions

Step 1: Hard-Boil the Egg

Place your egg in a small pot and cover it with cold water by about an inch.

Bring the water to a rolling boil over high heat. Once it’s boiling, cover the pot with a lid and remove it from the heat completely.

Let the egg sit in that hot water for 9 to 12 minutes, depending on how firm you like your yolk. (I do 10 minutes for that perfect creamy-but-set texture.)

When time’s up, immediately transfer the egg to a bowl of ice water to stop the cooking. Let it cool for a few minutes, then peel and set aside.

Step 2: Toast the Bread

While your egg is cooling, toast your bread slices until they’re golden and lightly crisp.

You want them sturdy enough to hold that creamy topping without getting soggy, but not so dark they’re crunchy all the way through. Think golden brown and inviting.

Step 3: Make the Cottage Cheese Avocado Mix

Scoop your avocado into a mixing bowl and add the cottage cheese and your peeled, chopped hard-boiled egg.

Use a fork to gently mash everything together. I like to leave mine a little chunky so you get those nice pockets of creamy avocado and bits of egg, but you can make it as smooth as you like.

Stir in your paprika, salt, black pepper, Dijon mustard, and sliced green onion if you’re using them. Taste and adjust the seasonings – this is your breakfast, make it perfect for you!

Step 4: Assemble the Toast

Divide your gorgeous cottage cheese-avocado mixture between your two slices of toast, spreading it generously all the way to the edges.
