Ingredients
2 cups cooked shredded chicken
1 can (15 oz) white beans (drained and rinsed)
1 can (10 oz) diced tomatoes with green chilies
1 cup corn (frozen or canned)
4 cups chicken broth
1 small onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon taco seasoning
Salt and pepper to taste
8–10 corn tortillas
Instructions
1. Heat olive oil in a large pot over medium heat and cook onion until soft
2. Add garlic and cook for one minute
3. Add chicken, beans, tomatoes, corn, broth, and seasoning and stir well
4. Simmer for 15 minutes and adjust seasoning
5. Warm tortillas in a skillet or microwave
6. Fill tortillas with chili mixture and serve
Notes
Add lime juice before serving for extra flavor
Mash some beans for thicker texture
