Description
A crispy phyllo pastry wrapped around a tangy feta and honey mixture, drizzled with spicy chili honey sauce. These Mediterranean-inspired rolls balance sweet, spicy, and savory in every bite.
Ingredients
14–16 sheets phyllo dough (thawed)
8 oz feta cheese (crumbled)
2 garlic cloves (minced)
2 tbsp honey (for filling)
¼ tsp salt
¼ tsp black pepper
¼ cup olive oil (for brushing)
5 tbsp honey (for sauce)
1 tbsp olive oil (for sauce)
1 tsp chili pepper flakes
Fresh thyme leaves (from 3 sprigs total)
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, mix feta cheese, garlic, 2 tbsp honey, ¼ tsp salt, ¼ tsp black pepper, and half the thyme leaves.
Brush one phyllo sheet with olive oil, fold in half, then cut into 3 strips.
Place 1 tbsp feta mixture on each strip, roll tightly, and arrange seam-side down on baking sheet.
Repeat with remaining phyllo and filling.
Brush rolls with remaining oil and bake for 18-20 minutes until golden.
For the sauce: In a small saucepan, warm 1 tbsp olive oil, then stir in 5 tbsp honey, chili flakes, and remaining thyme. Remove from heat.
Notes
Store unfilled rolls in an airtight container for up to 24 hours before baking.
Sauce can be made 2 days in advance and refrigerated.
Use vegan feta and egg-free phyllo for vegetarian adaptations.
