Ingredients
2 (8-inch) flatbreads (naan recommended)
¼ cup pesto (plus extra for drizzling)
1 cup shredded mozzarella cheese
1 cup cooked shredded chicken (rotisserie chicken recommended)
~4 oz cherry tomatoes, halved
1 tbsp fresh basil, chopped
Instructions
Preheat oven to 425°F (220°C)
Place flatbreads on a baking sheet, spaced apart for even cooking
Spread ¼ cup pesto evenly over each flatbread
Layer shredded mozzarella, shredded chicken, and cherry tomatoes over pesto
Top with fresh basil and season with salt and pepper
Bake for 10–12 minutes or until flatbreads are crisp and cheese is melted
Drizzle with additional pesto after baking and serve in 2 pieces per flatbread
Notes
Optional: Add thinly sliced bell peppers for extra color and crunch
Use store-bought rotisserie chicken for convenience
If naan is unavailable, any flatbread can substitute
