Ingredients
1 cup unsalted butter, softened
1 1/4 cups granulated sugar
1/2 cup light brown sugar
1 egg + 1 egg yolk
1 tablespoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
3/4 cup toffee bits
Extra sugar (for rolling, optional)
Flaky salt (for topping, optional)
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper
Cream butter with granulated and brown sugar until light and fluffy (2–3 minutes)
Add egg, egg yolk, and vanilla extract; mix until well combined
In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt
Gradually add dry ingredients to wet ingredients and mix until just combined
Fold in toffee bits
Roll dough balls in extra sugar (if using), then place on baking sheets
Sprinkle flaky salt on top (if using)
Bake for 12–14 minutes or until edges are golden
Transfer to cooling racks and let cool completely
Notes
Use parchment paper or silicone baking mats to prevent sticking
Store in an airtight container for up to 4 days
For crisper cookies, chill dough for 30 minutes before baking
