Description
This moist and flavorful peach cake combines the sweetness of fresh peaches with rich brown sugar, topped with a creamy frosting. Perfect for summer gatherings, it promises to be a nostalgic hit at any celebration.
Ingredients
15 oz yellow cake mix
3 large eggs
1/3 cup vegetable oil
1/2 cup peach nectar or peach juice
1 lb peaches (peeled and chopped, about 3–4)
Optional: drop of orange food coloring
For the frosting:
1/2 cup unsalted butter (cut into pieces)
1/2 cup heavy cream
1 cup brown sugar (packed)
1 teaspoon vanilla extract
2 1/2 cups confectioners’ sugar (sifted)
Instructions
Preheat oven to 350°F (175°C)
Combine cake mix, eggs, vegetable oil, peach nectar, and optional orange food coloring in a bowl. Mix until smooth
Gently fold in chopped peaches into the batter
Pour batter into a greased 9×12 or 9×13-inch baking pan
Bake for 28 minutes or until a toothpick inserted into the center comes out clean
For the frosting: In a saucepan, combine butter, heavy cream, brown sugar, and vanilla extract. Cook over medium heat until butter melts and mixture thickens, about 3–5 minutes
Remove from heat and stir in confectioners’ sugar until smooth
Spread frosting evenly over the warm cake
Notes
Substitute canned peaches for fresh if needed
Freeze leftover cake in an airtight container for up to 3 months
Optional food coloring adds a subtle peach hue
For a lighter option, reduce heavy cream in the frosting by 1/4 cup
