These easy Blueberry Swirl Yogurt Bites combine creamy Greek yogurt with a homemade blueberry swirl for a naturally sweetened, protein-packed frozen treat. Perfect for meal prep, healthy snacking, or a refreshing dessert!
Ingredients
Base Yogurt Mixture
- 2 cups plain Greek yogurt (or vanilla yogurt)
- 2–3 tablespoons honey or maple syrup (to taste)
- 1 teaspoon vanilla extract (optional for extra flavor)
- Pinch of salt (optional — enhances sweetness)
Blueberry Swirl
- 1½–2 cups fresh or frozen blueberries
- 1–2 tablespoons sugar or honey
- 1 tablespoon lemon juice
- 1–2 teaspoons cornstarch (optional, for thicker swirl)
Optional Add-Ins / Toppings
- Lemon zest (bright citrus flavor)
- Chia seeds or flax seeds (nutrient boost)
- Crushed granola (sprinkle on top after freezing)
- Coconut flakes (for garnish)
Instructions
In a small saucepan, combine blueberries, sugar (or honey), and lemon juice. Cook over medium heat, stirring occasionally, until berries break down and a thick juice forms — this should take about 8–10 minutes. You’ll know it’s ready when you can see the berries have burst and the mixture looks jammy.
Optional thickening: If you want a thicker swirl (which I highly recommend!), stir in the cornstarch dissolved in 1 tablespoon of water, then cook 1–2 more minutes until slightly thicker. This step makes ALL the difference in getting those picture-perfect swirls!
Remove from heat and let cool completely. This is important — if the blueberry mixture is too warm, it’ll make the yogurt watery. Let it sit while you prepare the yogurt base.
In a bowl, whisk the Greek yogurt with honey or maple syrup, vanilla extract (if using), and a pinch of salt until smooth and creamy. That pinch of salt might seem weird, but trust me — it enhances the sweetness and makes everything taste more vibrant!
Taste and adjust sweetness as needed. I usually start with 2 tablespoons of honey and add more if I want them sweeter. Remember, the blueberry swirl adds sweetness too!
Spoon a small amount of yogurt into each well of an ice cube tray or silicone mold — fill about halfway. Don’t overfill at this stage because you’ll be adding more layers!
Add a small dollop of the cooled blueberry mixture onto the yogurt in each well. I use about half a teaspoon per bite, but you can add more if you love that fruity flavor.
Spoon more yogurt on top to nearly fill the well, leaving just a tiny bit of space at the top.
Now for the fun part! Use a toothpick, skewer, or small spoon handle to gently swirl the blueberry mixture into the yogurt. Don’t over-mix — you want a marbled effect, not a uniform purple color. I like to do a figure-eight pattern or just zigzag back and forth a few times.
Place the tray in the freezer on a flat surface. Freeze 2–4 hours or until the yogurt bites are fully set. I usually leave mine overnight because I love them super frozen and firm!
Pop the yogurt bites out of the tray. If they’re sticking a bit, let the tray sit at room temperature for 2–3 minutes or run the bottom under warm water for just a few seconds.
If desired, sprinkle with granola, lemon zest, coconut, or chia seeds right before serving. I LOVE adding a little crunch with granola .
Notes
Common mistake to avoid: Over-swirling! If you mix too much, you’ll end up with purple yogurt instead of pretty swirls. Just a few gentle swooshes is all you need.
Smart shortcut: Use store-bought blueberry jam instead of making your own blueberry swirl. Just thin it out with a teaspoon of lemon juice and it works perfectly!
Want them less icy? Let the bites sit at room temperature for 3–5 minutes before eating. They’ll soften to a more creamy, gelato-like consistency.
