Ingredients
2 slices of bread (white or whole grain)
1 cup shredded cooked chicken (rotisserie or leftover)
1/4 cup BBQ sauce
1 cup shredded cheese (cheddar, mozzarella, or blend)
2 tablespoons butter
Instructions
1. Shred cooked chicken and mix with BBQ sauce
2. Place one slice of bread on a cutting board
3. Layer BBQ chicken mixture on bread, then top with cheese
4. Cover with second slice of bread
5. Heat skillet over medium heat and melt 1 tablespoon butter
6. Place sandwich in skillet and cook 3-4 minutes per side until golden brown and cheese melts
7. Add remaining butter when flipping for crispiness
8. Serve hot
