These banana bread cinnamon rolls combine ripe bananas with warm cinnamon sugar in soft, fluffy layers. They bake into tender rolls with a rich, comforting flavor, perfect for breakfast or brunch.
Ingredients
For the dough:
2 cups all-purpose flour
1/4 cup granulated sugar
1 packet active dry yeast
1/2 teaspoon salt
1/2 cup warm milk
1/4 cup unsalted butter, melted
1 large egg
2 ripe bananas, mashed
For the filling:
1/2 cup brown sugar
1 tablespoon ground cinnamon
1/4 cup unsalted butter, softened
For the glaze:
1 cup powdered sugar
1–2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
1. Whisk flour, sugar, yeast, and salt in a bowl.
2. Mix warm milk, melted butter, egg, and mashed bananas in another bowl.
3. Combine wet and dry ingredients to form dough.
4. Knead dough on a floured surface for 5–7 minutes until smooth.
5. Place dough in a greased bowl, cover, and let rise for 1 hour until doubled.
6. Mix brown sugar and cinnamon in a bowl.
7. Roll dough into a rectangle about 1/4 inch thick.
8. Spread softened butter over dough and sprinkle cinnamon sugar evenly.
9. Roll dough tightly into a log.
10. Cut into 12 equal rolls and place in a greased baking dish.
11. Cover and let rise for 30 minutes.
12. Bake at 350°F for 25–30 minutes until golden brown.
13. Whisk powdered sugar, milk, and vanilla to make glaze.
14. Drizzle glaze over warm rolls and serve.
Notes
Use very ripe bananas for best flavor and moisture.
Let dough rise in a warm place for proper texture.
Do not over-knead to keep rolls soft.
Add nuts or chocolate chips for variation if desired.
